Easy American Flag Fruit Pizza

We may not be having huge Fourth of July celebrations this year, thanks to Coronavirus, but we can still make festive desserts and pretend like we are!  This fruit pizza recipe is sooooooo easy and so yummy that it might just be your new go-to summer dessert!

INGREDIENTS:

  • 2 packages of refrigerated ready to bake sugar cookies (or 1 tube refrigerated sugar cookie dough)
  • 8 oz. cream cheese, softened
  • 1 tsp vanilla extract
  • 2/3 cup sugar
  • 8 oz. whipped topping, thawed
  • 3-4 cups fresh raspberries
  • 2 cups fresh blueberries
  • Optional:  white decorator’s frosting

DIRECTIONS:

  1.  Preheat oven to 375 degrees.
  2.  Spread sugar cookie dough into a pizza pan and press firmly with hands.
  3.  Bake cookie crust approx. 11-13 minutes until lightly browned.  Cool.
  4.  Beat cream cheese, vanilla, and sugar together until smooth.  Beat in half the whipped topping, and then fold in remaining whipped topping.
  5.  Spread cream cheese mixture onto the cookie crust and spread to the edges.
  6.  Outline the pizza with the blueberries and make a triangle in the upper right left corner with blueberries.
  7.  Use the raspberries to make the red stripes of the flag.
  8.  Optional: Use the decorator’s frosting to pipe the white stripes.
  9. Refrigerate until ready to serve.

I love recipes that look like you spent a lot of time and effort, when in reality, they’re super simple!  And with this one, you’re sorta kinda eating a healthy dessert (at least you can tell yourself that anyway….).  Bon appétit!!!
